    I like that this episode is set against Katrina as the backdrop (not that the disaster was a good thing to have happened, though) and in that regards it’s not exactly a food program per say but a social documentary as well.

    I was in New Orleans about 20 years ago, and enjoyed the Creole and Cajun food there - yes, even went to a fancy restaurant at the French Quarter (a big deal when one didn’t have much money then, hehe! :D I still attempt to cook cajun (chicken) at home…

    Yes, I thought that as well when I saw this. It seems they are trying to do different things with the show beyond the usual great food experiences.

    New Orleans was one of my favorite U.S. cities to visit. The whole Katrina thing is very sad. I find that the easiest way to get that Cajun flavor is to marinate meats or fish with this spice mixture from Chef Paul K of New Orleans.
